This matches what smbstatus prints out. Note there's also the removal of
an '-' in "hmac-sha-256" => HMAC-SHA256".

For now client_sign_algos->num_algos will always be 0,
but that'll change in the next commits.

This function needs to get the whole smb buffer in order to get
the alignment for unicode correct.
